200g green beans, trimmed.
1 shallot, finely chopped
Small handful of parsley chopped
anchovies (in olive oil ideally) chopped
Lemon zest and juice
1tbsp good olive oil
1 tbsp Parmesan/Pecorino grated
(optional Sundried tomatoes)
Method
Bring beans to the boil for 5 minutes, then drain and plunge into cold water.
In a separate bowl mix all other ingredients together, add and mix the beans in and then serve.
I have added in griddled peppers, griddled courgette, peas or broad beans, which have all worked well in the past.
